There's a difference between the keyboard X uses and systemwide one.
On the command line I personally use "setxkbmap -rules evdev -model evdev -layout us -variant altgr-intl" which gives me all the symbols I need, including French, German, Scandinavian and Spanish.

For Canadian the "fr-legacy" is used by default.
Want to know how many are available: "less /usr/share/X11/xkb/rules/base.lst " 
You can set a shortcut in to a key-combo in e16 if you want to switch keboard maps with that command ........ but I suspect @Rebel450 would (rightly) want a GUI option for that.
